Kirstie's Kitchen: The Spicy Melon Summer Cocktail

With summer here and rooftop/pool season upon us, I’ve been in the market for a new cocktail that’s easy to make for one or for a crowd. Enter this watermelon and jalapeño goodness - crafted by my fiancé.

Ingredients (serves 2):

1 jalapeno

16 oz of chopped watermelon

4 oz of vodka

.5 oz of simple syrup (equal parts agave syrup, equal parts water - put in a saucepan, then heat up on medium heat and mix. Transfer to the fridge to cool. you can also buy this at the Liquor store premade)

Lime juice

Other materials:

Cocktail mixer

Muddler (or flat edged kitchen utensil)

2 rocks glasses

Add tons of ice with cold water into two rocks glasses (this is going to cool the glasses down)

Fill a pint glass with the chopped watermelon

Chop up the jalapeño into thin slices (the more you use the spicier it will be; take the seeds out if you don’t like heat)

  • Save 4 slices for garnish

  • Put the rest in with your watermelon

Muddle the watermelon and jalapeño in the pint glass until it’s mostly liquid (if you don’t have a muddler, any heavy, flat-surface kitchen utensil will work)

Spicy tip: let the mixture sit out and soak for longer

Add vodka, simple syrup and a splash of lime juice into a cocktail mixer

Strain and transfer everything from the pint glass to the mixer

Fill mixer with ice (save this for last so you don’t dilute the drink)

Shake it up! Approximately 15 shakes works

Empty rocks glasses with ice and water

Transfer the mix from the cocktail shaker to two rocks glasses

Add a few ice cubes to each glass and garnish with the last of the jalapeño slices

Pro tip: marry an ex-bartender who can do this all for you :)

Stay thirsty, my friends...
